Most of us take pizza for granted. A pie from the local house of pizza is always an acceptable quick dinner… a trip to a favorite pizza place, like A. Modern in New Haven, CT, is like a slice of heaven.
Try now to imagine a diagnosis of Celiac disease that ends pizza heaven forever. Incomprehensible, until it happens. The gluten free world has come along way since my diagnosis in 2005, but there are some things that seem virtually impossible. Good (and I mean really good) gluten free pizza is one of those items that is a thing of the past.
I have tasted a variety of gluten free pizzas across the US and about half are edible, but I wouldn’t really call them pizza.
A few years ago, a trip to Rome changed everything. I had a pizza to cry for (and I did cry)! It was better than any US pizza, gluten free or otherwise.
So now for me to “go out for pizza”, we must go to Rome. A very expensive pizza indeed!
We’ve now been to this place multiple times on multiple visits. It continues to be amazing. And the best part is now there is a gluten free gelato place a few doors down. So while most people go to Rome for the Coliseum, the Vatican, and the Trevi Fountain, we go to Rome for Pizza!
I am indeed in heaven on the streets of Rome where it’s all about the light.
